Ingredients

  • 1 batch Simple Syrup
  • 3 (1-inch-long) strips of lemon peel
  • 3 large fresh basil leaves
  • 1 (750 ml) bottle of chilled Champagne or dry sparkling wine
  • Garnish: basil leaves and lemon peel twists

Instructions

  1. Prepare a batch of Simple Syrup and remove from heat.
  2. Stir in lemon peel strips and large fresh basil leaves, then cover and steep for 30 minutes.
  3. Pour the mixture through a fine mesh strainer into a bowl to discard solids.
  4. Cool the syrup to room temperature for about 1 hour.
  5. Pour the cooled syrup into a 2- to 3-qt. pitcher.
  6. Stir in the chilled Champagne or dry sparkling wine.
  7. Fill 6 stemless wineglasses with ice.
  8. Pour the cocktail evenly into glasses and garnish with basil leaves and lemon peel twists.
