Ingredients

  • 1 1/2 cup water
  • 3/4 cup caster sugar
  • 3-inch long piece fresh ginger, peeled, thinly sliced
  • 1 lemon, peeled with vegetable peeler, juiced
  • Pinch of sea salt
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh blueberries
  • 1 oz dark rum
  • Approximately 1 cup ice cubes
  • Handful of fresh mint leaves

Instructions

  1. In a medium heavy-based saucepan, combine water, sugar, ginger, lemon peel, and juice, and salt.
  2. Bring to a boil over high heat, then reduce the heat and simmer for 5 minutes until the syrup thickens slightly and is infused with the ginger and lemon.
  3. Set the syrup aside at room temperature until cool.
  4. Strain the syrup into a small bowl and discard the solids.
  5. In a blender, combine the berries, rum, and 1/2 cup of ginger syrup; reserve the remaining syrup for another use.
  6. Blend on high speed for 15 seconds, or until well blended.
  7. Fill a glass halfway with ice.
  8. Add the berry mixture and mint and stir well to allow some ice to melt into the berry mixture.
  9. Pour into a highball cocktail glass and serve immediately.
