Ingredients
- 1/2 cup Bing or Rainier cherries, pitted
- 1 tablespoon sugar
- 1 sprig of fresh thyme
- 1 tablespoon water
- 1 tablespoon fresh lime juice
- Ice
- Splash of club soda
Instructions
- In a saucepan over medium-high heat, combine the cherries, sugar, thyme, and water. Cook until the cherries have softened, about 30 minutes.
- Remove from the heat and let the mixture cool. Discard the thyme and transfer the mixture to a blender. Puree until smooth.
- Strain the puree through a fine-mesh sieve into a glass pitcher. Stir in the lime juice and refrigerate for at least 30 minutes.
- Fill a Collins glass with ice. Pour the cherry mixture into the glass, filling it one-third full. Top with club soda.
