Ingredients

  • 1/2 cup Bing or Rainier cherries, pitted
  • 1 tablespoon sugar
  • 1 sprig of fresh thyme
  • 1 tablespoon water
  • 1 tablespoon fresh lime juice
  • Ice
  • Splash of club soda

Instructions

  1. In a saucepan over medium-high heat, combine the cherries, sugar, thyme, and water. Cook until the cherries have softened, about 30 minutes.
  2. Remove from the heat and let the mixture cool. Discard the thyme and transfer the mixture to a blender. Puree until smooth.
  3. Strain the puree through a fine-mesh sieve into a glass pitcher. Stir in the lime juice and refrigerate for at least 30 minutes.
  4. Fill a Collins glass with ice. Pour the cherry mixture into the glass, filling it one-third full. Top with club soda.
