Ingredients

  • 1/2 cup full-fat canned coconut milk
  • 1 egg yolk
  • 1 tablespoon maple syrup
  • 1/8 teaspoon grated nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 - 1 tablespoon bourbon (optional)

Instructions

  1. In a blender, blend the egg yolk and maple syrup until light and fluffy.
  2. Heat the coconut milk, nutmeg, and cinnamon in a saucepan until simmering, whisking often.
  3. Slowly pour the heated coconut milk into the egg mixture while blending or mixing.
  4. Transfer the mixture back to the saucepan and heat until thickened, stirring constantly.
  5. Remove from heat, stir in vanilla extract and optional bourbon.
