Ingredients

  • 2 oz rye whiskey
  • 1 oz freshly-squeezed lemon juice
  • 3/4 oz simple syrup
  • 1/2 + oz dry red wine
  • 1 egg white

Instructions

  1. In a cocktail shaker without ice, combine the rye whiskey, freshly-squeezed lemon juice, simple syrup, and egg white. Shake for 30 seconds (this is called a dry shake).
  2. Carefully add a handful of ice to the shaker and shake vigorously for 30+ seconds to create a rich foam.
  3. Strain the mixture into a lowball glass filled with ice.
  4. Slowly pour the dry red wine over the back of a bar spoon to float it on top of the cocktail. Keep the spoon close to the surface without touching it to maintain the foam. As the drink settles, the foam from the egg white will rise to the top.
