Ingredients

  • 1 cup whole milk
  • 1/4 cinnamon stick
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon pure vanilla extract
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/8 teaspoon ground cinnamon for topping (optional)

Instructions

  1. In a medium saucepan over low heat, whisk together the whole milk, ground nutmeg, and vanilla extract.
  2. Add the cinnamon stick and bring the mixture to a low boil for 3-4 minutes.
  3. In a separate bowl, whisk the egg yolks and sugar together until the yolks become pale in color.
  4. Gradually add a spoonful of the hot milk mixture to the egg yolks and sugar, mixing well after each addition.
  5. Slowly pour in the remaining hot milk mixture, whisking constantly.
  6. Pour the combined mixture back into the saucepan and cook over medium heat until it thickens and coats the back of a spoon.
  7. Remove from heat and stir in the heavy cream.
