Ingredients

  • 1 1/2 egg yolks
  • 2 tablespoons sugar
  • 1 cup whole milk
  • 3/4 cup heavy cream
  • 1/4 teaspoon fresh ground nutmeg (packed)
  • 1/8 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla

Instructions

  1. Whisk the egg yolks in a large bowl until they become light in color.
  2. Add the sugar and continue to whisk until light, fluffy, and smooth.
  3. Combine the milk and cream in a medium-sized saucepan and heat on medium until it just begins to steam.
  4. Slowly whisk the hot milk into the egg yolks. Whisk until frothy, then stir in the cinnamon and nutmeg.
  5. Add the mixture back to the pot and heat on medium heat until simmering and thickened. It should coat the back of a wooden spoon. Do not allow to boil.
  6. Remove from the heat and stir in the vanilla.
  7. Place a strainer over your bowl and carefully pour the mixture through the strainer.
  8. Cover and refrigerate until chilled.
  9. Garnish with fresh nutmeg, cinnamon, or candy canes.
