Ingredients

  • 1 cup whole milk
  • 1/2 tablespoon vanilla extract
  • 1/4 teaspoon nutmeg
  • 1 egg
  • 1 egg yolk
  • 2 tablespoons sugar
  • 2 oz heavy cream
  • 1.50 oz light rum (optional)
  • Whipped Cream (cinnamon, nutmeg, for garnish)

Instructions

  1. In a small saucepan over medium-low heat, combine the milk and vanilla, and simmer until it begins to warm. Remove from heat.
  2. In a large bowl, use a hand mixer to beat the eggs, yolks, sugar, and salt for about 5 minutes until the mixture thickens and becomes slightly frothy.
  3. Slowly pour the egg mixture into the saucepan with the warm milk and vanilla, whisking constantly to combine.
  4. Return the pan to the heat and whisk constantly for about 5 minutes until the mixture reaches 165 degrees.
  5. Remove from heat and stir in the heavy cream. Optionally, pour the mixture through a strainer to ensure smoothness.
  6. If adding rum, stir it in now.
  7. Refrigerate for at least 3 hours or overnight before serving.
