Ingredients
- 1 cup whole milk
- 1/2 tablespoon vanilla extract
- 1/4 teaspoon nutmeg
- 1 egg
- 1 egg yolk
- 2 tablespoons sugar
- 2 oz heavy cream
- 1.50 oz light rum (optional)
- Whipped Cream (cinnamon, nutmeg, for garnish)
Instructions
- In a small saucepan over medium-low heat, combine the milk and vanilla, and simmer until it begins to warm. Remove from heat.
- In a large bowl, use a hand mixer to beat the eggs, yolks, sugar, and salt for about 5 minutes until the mixture thickens and becomes slightly frothy.
- Slowly pour the egg mixture into the saucepan with the warm milk and vanilla, whisking constantly to combine.
- Return the pan to the heat and whisk constantly for about 5 minutes until the mixture reaches 165 degrees.
- Remove from heat and stir in the heavy cream. Optionally, pour the mixture through a strainer to ensure smoothness.
- If adding rum, stir it in now.
- Refrigerate for at least 3 hours or overnight before serving.
