Ingredients

  • 3/4 cup milk
  • 1 tablespoon sugar
  • 1/8 teaspoon vanilla extract
  • 1/4 teaspoon orange zest
  • 1 large egg yolk
  • 2 tablespoons cream (or half and half)
  • 1 tablespoon condensed milk
  • Aguardiente to taste (1-2 fluid ounces)

Instructions

  1. In a pot, combine the milk, sugar, vanilla, and orange zest. Bring the mixture to a simmer over low heat, stirring occasionally.
  2. In a bowl, combine the egg yolk and condensed milk. Add the cream and mix until well combined.
  3. Gradually add a few tablespoons of the simmering milk into the egg yolk mixture, stirring each time. Repeat this process two more times.
  4. Slowly incorporate the egg yolk mix into the milk mixture, stirring thoroughly.
  5. Cook the mixture over low-medium heat, stirring constantly until it begins to thicken. Then, remove it from the heat and let it cool completely.
  6. Add the aguardiente to taste and refrigerate the Rompope until ready to serve.
