Ingredients
- 3 tbsp granulated sugar
- 3 tbsp water
- 1/2 cup Prosecco (or champagne)
- Juice and zest of 1/2 lemon
Instructions
- In a medium saucepan over medium heat, whisk together sugar and water until sugar is completely dissolved to make simple syrup.
- Transfer the simple syrup to a large bowl and let it cool completely. You can speed up the cooling process by setting the bowl over a larger bowl filled with ice water.
- Stir in the Prosecco, lemon juice, and lemon zest into the simple syrup, then pour the mixture into a 9"x13" pan.
- Freeze the mixture for 2 hours, then use a fork to scrape up the icy parts and return it to the freezer. Repeat this process every 30 minutes until the mixture is thoroughly frozen, about 2 hours more.
- Cover the pan with plastic wrap and keep it in the freezer until ready to serve.
