Ingredients
- 1/2 cup light coconut milk
- 1/2 cup regular coconut milk
- 2 tablespoons coconut sugar (or brown sugar)
- 1/2 tablespoon vanilla extract
- 1/8 teaspoon cinnamon
- 1/4 cup strong, brewed coffee
- 1/4 cup Jameson Whiskey
- Pinch of salt
Instructions
- In a medium saucepan, combine both types of coconut milk and stir well.
- Add coconut sugar, vanilla, and cinnamon to the saucepan, and whisk to combine.
- Bring the mixture to a low boil, then reduce the heat and let it simmer for 10-15 minutes, stirring frequently, until it thickens slightly.
- Remove the saucepan from the heat, then stir in the brewed coffee and a pinch of salt.
- Add the Jameson Whiskey to the mixture and adjust the amount as per your preference.
- Store the Baileys Irish Cream in airtight containers in the fridge and stir well before each use.
- Serve over ice, mix with coffee, or pour over ice cream.
