Ingredients

  • 1/2 cup light coconut milk
  • 1/2 cup regular coconut milk
  • 2 tablespoons coconut sugar (or brown sugar)
  • 1/2 tablespoon vanilla extract
  • 1/8 teaspoon cinnamon
  • 1/4 cup strong, brewed coffee
  • 1/4 cup Jameson Whiskey
  • Pinch of salt

Instructions

  1. In a medium saucepan, combine both types of coconut milk and stir well.
  2. Add coconut sugar, vanilla, and cinnamon to the saucepan, and whisk to combine.
  3. Bring the mixture to a low boil, then reduce the heat and let it simmer for 10-15 minutes, stirring frequently, until it thickens slightly.
  4. Remove the saucepan from the heat, then stir in the brewed coffee and a pinch of salt.
  5. Add the Jameson Whiskey to the mixture and adjust the amount as per your preference.
  6. Store the Baileys Irish Cream in airtight containers in the fridge and stir well before each use.
  7. Serve over ice, mix with coffee, or pour over ice cream.
