Ingredients

  • 6-8 Loquats
  • 2 tbsp Lime Juice
  • 1 tbsp Simple Syrup
  • 2 oz White Rum
  • 4 oz Sparkling Water
  • Ice
  • 2 tbsp Sugar
  • 1 cup Water

Instructions

  1. Prepare simple syrup by dissolving sugar in boiling water, then set aside to cool.
  2. Wash and deseed the loquats, then blend them with lime juice until smooth.
  3. Add the simple syrup and rum to the loquat mixture and blend again.
  4. Taste and adjust sweetness if desired.
  5. Fill a glass with ice and pour in half of the juice mixture.
  6. Top it off with sparkling water and garnish with a lime wedge and/or fresh mint. Cheers!
