Ingredients

  • 1 egg yolk
  • 1 1/2 tsp monk fruit (low carb sweetener)
  • 1 1/2 cups Almond Milk
  • 1 1/2 cup Heavy cream
  • 1 oz Dark rum
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg (ground)

Instructions

  1. In a bowl, beat the egg yolk until it turns a golden color.
  2. Add the monk fruit sweetener and vanilla extract, then mix thoroughly.
  3. In a saucepan, heat the almond milk and heavy cream until it gently comes to a boil.
  4. Slowly pour the heated milk and cream into the egg mixture, whisking as you add.
  5. Add the cinnamon to the mixture.
  6. Return the combined mixture to the saucepan over medium heat and whisk until it gently thickens.
  7. Remove from the heat and stir in the dark rum.
  8. Pour the mixture into a serving glass and sprinkle the ground nutmeg on top.
  9. Serve warm or allow to cool and serve over ice.
