Ingredients
- 1 egg yolk
- 1 1/2 tsp monk fruit (low carb sweetener)
- 1 1/2 cups Almond Milk
- 1 1/2 cup Heavy cream
- 1 oz Dark rum
- 1/2 tsp Vanilla extract
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg (ground)
Instructions
- In a bowl, beat the egg yolk until it turns a golden color.
- Add the monk fruit sweetener and vanilla extract, then mix thoroughly.
- In a saucepan, heat the almond milk and heavy cream until it gently comes to a boil.
- Slowly pour the heated milk and cream into the egg mixture, whisking as you add.
- Add the cinnamon to the mixture.
- Return the combined mixture to the saucepan over medium heat and whisk until it gently thickens.
- Remove from the heat and stir in the dark rum.
