Ingredients

  • 1.50 large egg yolks
  • 2 tablespoons granulated sugar
  • Pinch of salt
  • 1 cup oat milk (preferably extra creamy variety)
  • 1 whole clove (or a pinch of ground cloves)
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg (preferably freshly grated) (plus more for topping)
  • 1/8 teaspoon pure vanilla extract
  • 1 teaspoon rum extract (or substitute alcohol of your choice)

Instructions

  1. In a large bowl, whisk together the egg yolks and sugar until smooth. Set aside.
  2. In a medium saucepan, combine oat milk, cloves, salt, nutmeg, and cinnamon. Heat over medium heat, bringing it close to a boil.
  3. Gradually pour about 1/4 cup of the hot oat milk mixture into the egg yolk mixture, whisking constantly to temper the egg yolks.
  4. Pour the egg and oat milk mixture back into the saucepan gradually, stirring constantly. Heat over medium heat until thickened, about 5 minutes, stirring constantly.
  5. Taste and add more sugar if needed. Strain to remove cloves and let cool for about 1 hour.
  6. Stir in vanilla and rum extract (or alcohol of your choice to taste). Refrigerate before serving, 8 hours to overnight.
