Ingredients

  • 1 1/2 large egg yolks
  • 2 tbsp granulated sugar
  • Pinch of salt
  • 3/4 cup oat milk (preferably extra creamy variety)
  • 1 whole clove (or a pinch of ground cloves)
  • 1/4 tsp ground cinnamon
  • Pinch of nutmeg (preferably freshly grated, plus more for topping)
  • 1/4 tsp pure vanilla extract
  • 1 tsp rum extract (or substitute alcohol of your choice)

Instructions

  1. In a large bowl, whisk together egg yolks and sugar until smooth. Set aside.
  2. In a medium saucepan, combine oat milk, cloves, salt, nutmeg, and cinnamon. Heat over medium heat and bring to a near boil.
  3. Gradually pour about 1/4 cup of the hot oat milk mixture into the egg yolk mixture, whisking constantly to temper the egg yolks.
  4. Pour the egg and oat milk mixture slowly back into the saucepan, stirring constantly. Heat over medium heat until thickened, about 5 minutes.
  5. Taste and add more sugar if needed. Strain to remove cloves and let cool for about 1 hour.
  6. Stir in vanilla and rum extract. Refrigerate before serving, 8 hours to overnight.
