Ingredients

  • 2 oz unsweetened non-dairy milk
  • 1 oz dark spiced rum
  • 1 oz vanilla vodka
  • Ice
  • 1 teaspoon agave nectar
  • 1 tablespoon graham cracker crumbs
  • 1/4 cup pumpkin puree
  • 1/2 cup water
  • 2 tablespoons light brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a small saucepan, combine the pumpkin, water, brown sugar, pumpkin pie spice, vanilla extract, and salt. Simmer over medium heat for 5 to 7 minutes until it reduces to about 1/2 cup.
  2. Transfer the mixture to a shallow bowl and chill in the freezer for 20 to 30 minutes until significantly cooler.
  3. Once chilled, add the pumpkin mixture to a cocktail shaker along with non-dairy milk, rum, vodka, and 3 ice cubes. Shake for 15 seconds.
  4. Wet the rim of a rocks glass or stemless wine glass by rolling it in agave nectar, then coat the edges in graham cracker crumbs.
  5. Add ice cubes to the glass and pour in the drink mixture. Serve immediately and enjoy responsibly! The pumpkin base can also be made ahead of time and stored in the refrigerator for up to 7 days or frozen for up to 6 months.
