Ingredients

  • 2 tablespoons heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • Pinch of salt
  • 1 tablespoon dark rum
  • Pinch of ground nutmeg, plus extra for serving

Instructions

  1. In a medium bowl, whisk together 2 tablespoons of heavy cream, egg yolk, and sugar until the mixture is pale yellow and thoroughly combined.
  2. In a medium saucepan, heat the whole milk and salt until it simmers, stirring occasionally.
  3. Slowly pour the simmering milk into the yolk mixture, constantly whisking to temper the eggs, then return the mixture to the saucepan.
  4. Cook the mixture over medium-low heat, whisking constantly until it reaches 160 degrees, which should take 1 to 2 minutes.
  5. Pour the eggnog into a clean bowl and stir in the rum and nutmeg. Place the bowl in a larger bowl filled with ice and refrigerate until the eggnog reaches 40 degrees, stirring occasionally. This should take 1 to 2 hours.
  6. Just before serving, whip the remaining 2 tablespoons of heavy cream until soft peaks form, and then fold it into the chilled eggnog.
  7. Serve the eggnog garnished with extra nutmeg. (Eggnog can be covered and refrigerated for up to 24 hours.)
