Ingredients
- 2 tablespoons heavy cream
- 1 large egg yolk
- 1 tablespoon sugar
- 1/2 cup whole milk
- Pinch of salt
- 1 tablespoon dark rum
- Pinch of ground nutmeg, plus extra for serving
Instructions
- In a medium bowl, whisk together 2 tablespoons of heavy cream, egg yolk, and sugar until the mixture is pale yellow and thoroughly combined.
- In a medium saucepan, heat the whole milk and salt until it simmers, stirring occasionally.
- Slowly pour the simmering milk into the yolk mixture, constantly whisking to temper the eggs, then return the mixture to the saucepan.
- Cook the mixture over medium-low heat, whisking constantly until it reaches 160 degrees, which should take 1 to 2 minutes.
- Pour the eggnog into a clean bowl and stir in the rum and nutmeg. Place the bowl in a larger bowl filled with ice and refrigerate until the eggnog reaches 40 degrees, stirring occasionally. This should take 1 to 2 hours.
- Just before serving, whip the remaining 2 tablespoons of heavy cream until soft peaks form, and then fold it into the chilled eggnog.
