Ingredients

  • 1/2 oz orgeat
  • Fresh sage for muddling and garnish
  • 1 1/2 oz apple cider
  • 1 oz Ransom Spirits Old Tom gin
  • 1 oz lemon juice
  • 1/2 oz Laird's Applejack
  • 1/2 oz ginger syrup
  • 1/4 oz Amaro Montenegro
  • 1/4 oz Pierre Ferrand dry curacao
  • 1/4 oz Rothman and Winter orchard apricot
  • 2 dashes cardamom bitters
  • Drizzle of light-bodied red wine

Instructions

  1. Gently muddle a few sage leaves with the orgeat in a tall glass.
  2. Add the rest of the ingredients, except for the red wine and sage.
  3. Fill the glass 2/3 full with crushed ice and stir well to incorporate the ingredients.
  4. Add more ice to form a mound over the top, then drizzle with red wine and garnish with a sage bundle.
