A frothy mugi (barley) shochu fizz with pickled plum tahini and miso-tinged syrup, offering a delightful blend of sweet and savory flavors.
Ingredients
- 1 oz Asahi Mannenboshi Genshu (barley shochu)
- 1 oz Diplomático Reserva Exclusiva rum
- 1/2 oz Lustau Los Arcos amontillado sherry
- 1/2 oz Miso Syrup
- 1/2 oz Umeboshi Tahini
- 1/4 oz lemon juice
- 1 egg white
Instructions
- Combine all the ingredients in a mixing tin.
- Shake the mixture without ice until the egg white emulsifies.
- Add ice to the mixing tin and shake again to chill.
- Double strain the mixture into a fizz glass.
- Garnish with black sesame seeds.
