Ingredients

  • 1/2 lemon
  • 1/3 cup ginger beer
  • 2 tbsp bourbon
  • 1 tbsp pomegranate seeds
  • 1 1/2 tsp sugar cane syrup
  • 1/3 cup cold water
  • 1/2 peach, thinly sliced

Instructions

  1. Roll the lemon on the counter to release its juices, then cut it in half and squeeze the juice through a strainer into a bowl.
  2. Cut the peach into thin slices, removing any mushy flesh or threads from around the pit. You can sprinkle lemon juice on the peach slices to prevent browning if doing this step in advance.
  3. Slice the remaining lemon into rings (removing any seeds) and add to a pitcher with the peach slices.
  4. Pour in the lemon juice, syrup, ginger beer, bourbon, and water, then mix lightly with a long spoon.
  5. Refrigerate for at least an hour or until well chilled.
  6. Add pomegranate seeds and ice cubes to the pitcher, stir lightly, and serve.
