Swizzling Queen's Delight
A refreshing cocktail featuring demerara rum, lime juice, rich demerara sugar syrup, and mint, with a touch of Angostura bitters, served over crushed ice.
Ingredients
- 2 oz demerara rum
- 1 oz lime juice
- 3/4 oz rich demerara sugar syrup (2:1)
- Small handful of mint
- 2-4 dashes Angostura bitters
- Mint sprigs for garnish
- Crushed ice
Instructions
- Prepare the rich demerara sugar syrup by simmering 2 cups of demerara sugar with 1 cup of water until dissolved, then let it cool and refrigerate.
- In a cocktail shaker, muddle mint, lime juice, and rich demerara sugar syrup.
- Add demerara rum to the shaker and shake briefly.
- Pour the mixture into a tall glass or a tiki mug.
- Fill the glass with crushed ice and swizzle the drink using a bar spoon or swizzle stick until frost forms on the outside of the glass.
- Add 2-4 dashes of Angostura bitters and top with more crushed ice.
- Garnish with a generous bouquet of mint and enjoy!
