Ingredients

  • 2 oz demerara rum
  • 1 oz lime juice
  • 3/4 oz rich demerara sugar syrup (2:1)
  • Small handful of mint
  • 2-4 dashes Angostura bitters
  • Mint sprigs for garnish
  • Crushed ice

Instructions

  1. Prepare the rich demerara sugar syrup by simmering 2 cups of demerara sugar with 1 cup of water until dissolved, then let it cool and refrigerate.
  2. In a cocktail shaker, muddle mint, lime juice, and rich demerara sugar syrup.
  3. Add demerara rum to the shaker and shake briefly.
  4. Pour the mixture into a tall glass or a tiki mug.
  5. Fill the glass with crushed ice and swizzle the drink using a bar spoon or swizzle stick until frost forms on the outside of the glass.
  6. Add 2-4 dashes of Angostura bitters and top with more crushed ice.
  7. Garnish with a generous bouquet of mint and enjoy!
