Ingredients

  • 2 oz 100 proof bourbon (or rye)
  • 3/4 oz orgeat syrup
  • 1 oz pineapple juice
  • 1/2 oz lemon juice
  • 1 bar spoon allspice dram
  • 2 dashes Bittermen's 'Tiki' bitters
  • Garnish: fresh or dried pineapple garnish, mint leaves, 1-2 cherries

Instructions

  1. In a mixing tin, combine the bourbon, orgeat syrup, allspice dram, pineapple juice, and lemon juice.
  2. Add 2 dashes of Bittermen's 'Tiki' bitters to the mixture.
  3. Fill the tin with ice and shake vigorously for 10-12 seconds.
  4. Strain the cocktail into a coupe glass or over ice in a rocks glass, depending on your preference.
  5. Garnish with pineapple, mint leaves, and a cherry or two.
