Rompope, a Mexican Eggnog, is a rich and velvety punch infused with almonds, cinnamon, and vanilla, perfect for any occasion.
Ingredients
- 1/8 cup blanched almonds
- 1/4 cup plus 1/3 tablespoon granulated sugar
- 1 1/2 cups whole milk
- 1/3 cinnamon stick
- Rind of 1/2 lemon
- 1/8 teaspoon pure vanilla extract
- Pinch of baking soda
- 1 large egg yolk
- 2 tablespoons white rum or aguardiente
Instructions
- In a food processor, pulse almonds with 1/3 tablespoon of sugar until finely ground.
- In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15-20 minutes.
- In a bowl, whisk egg yolk, 1/4 cup sugar, and ground almonds until thick and pale.
- Remove cinnamon and lemon rind from the milk, then slowly add the milk to the yolk mixture while whisking constantly.
- Cook the mixture over low heat until it thickens enough to coat the back of a spoon, about 5-7 minutes.
- Let the mixture cool completely, then stir in rum or aguardiente. Serve.
