Ingredients

  • 1/8 cup blanched almonds
  • 1/4 cup plus 1/3 tablespoon granulated sugar
  • 1 1/2 cups whole milk
  • 1/3 cinnamon stick
  • Rind of 1/2 lemon
  • 1/8 teaspoon pure vanilla extract
  • Pinch of baking soda
  • 1 large egg yolk
  • 2 tablespoons white rum or aguardiente

Instructions

  1. In a food processor, pulse almonds with 1/3 tablespoon of sugar until finely ground.
  2. In a saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15-20 minutes.
  3. In a bowl, whisk egg yolk, 1/4 cup sugar, and ground almonds until thick and pale.
  4. Remove cinnamon and lemon rind from the milk, then slowly add the milk to the yolk mixture while whisking constantly.
  5. Cook the mixture over low heat until it thickens enough to coat the back of a spoon, about 5-7 minutes.
  6. Let the mixture cool completely, then stir in rum or aguardiente. Serve.
