Ingredients

  • 1 1/3 tablespoons unsalted butter
  • 3 tablespoons packed dark brown sugar
  • 1/6 teaspoon ground cinnamon
  • 1/6 teaspoon vanilla extract
  • 1/12 teaspoon freshly grated nutmeg, plus more for sprinkling
  • Pinch of ground allspice or ground cloves
  • Pinch of kosher salt
  • 1/3 cup water
  • 2 tablespoons dark rum
  • 1/3 cup whipped cream (optional)
  • 1 (4-inch) long cinnamon stick

Instructions

  1. Place unsalted butter in a medium heatproof bowl and let it soften at room temperature.
  2. Add dark brown sugar, ground cinnamon, vanilla extract, freshly grated nutmeg, ground allspice or ground cloves, and kosher salt to the bowl.
  3. Use an electric hand mixer to beat the mixture on high speed until fluffy and smooth, about 2 minutes.
  4. Bring water to a boil in a kettle or medium saucepan. Let the water cool slightly for about 30 seconds.
  5. Carefully pour the water into the butter mixture.
  6. Add dark rum and beat the mixture with the mixer on medium speed until the butter is dissolved and the mixture is frothy, 1 to 2 minutes.
  7. Pour the mixture into a mug.
  8. Top with whipped cream if desired and sprinkle with more freshly grated nutmeg.
  9. Garnish the mug with a cinnamon stick.
