Ingredients

  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • 1 egg
  • 1 egg yolk
  • 2 tablespoons sugar
  • 1/4 cup heavy cream
  • 1 oz light rum (optional)
  • Whipped cream, cinnamon, nutmeg (for garnish)

Instructions

  1. In a small saucepan, heat the milk and vanilla until it simmers.
  2. In a large bowl, use an electric mixer to beat the eggs, yolks, sugar, and salt until thick and frothy.
  3. Slowly pour the egg mixture into the saucepan with the milk, whisking constantly.
  4. Return the pan to heat and whisk constantly until the temperature reaches 165 degrees.
  5. Remove from heat and stir in the heavy cream. Strain the mixture if desired.
  6. If adding rum, stir it in now.
  7. Refrigerate for at least 3 hours or overnight before serving.
